Tempura Rolls are one of the most exquisite types of sushi. Its origin dates back to the 16th century in a trade exchange between Portugal and Japan. The Portuguese left an indelible mark on the island known today as tempura. Japanese chefs inherited the dish from the Portuguese and improved it.
Tempura is the quintessential Japanese batter, which began as street food and has since been elevated to haute cuisine. Tempura sushi has become the star of many Japanese restaurants. Traditionally, makis were pieces of sushi filled with fish, vegetables and other ingredients, wrapped in rice and nori seaweed. Now, the stuffed roll is battered and deep-fried into a crispy tempuramaki.
What is tempura
Tempura is a culinary batter technique, traditionally prepared with flour, egg and ice water. It's not easy to do well, but when done right it makes for a light, crispy batter. The trick is to get the batter ingredients very cold and the oil very hot. It is also very important to fry the food in small batches, so that the oil does not lose temperature.
The main idea is to get a crunchy inside while maintaining the freshness and softness of the inside. To do this, we first make a maki roll (with seaweed on the outside and rice on the inside), only much more elaborate and then we fry it, thus obtaining the tempura sushi. This type of tempura roll is an irresistible mix of contrasts, with juicy, fresh, crunchy and tasty ingredients - quite a combination!
